We are currently seeking an outstanding Chef de Partie to work under the direction of the Catering Manager/Sous Chef to prepare, cook and present food to the highest possible standards, working within pre-agreed budgetary targets. The Chef de Partie will take responsibility for supplies for their area of responsibility and ensure that dishes are produced and costed to required standards of quality and presentation for service.  They will supervise other kitchen staff and assist in the planning and preparation of menus, ensuring that an excellent standard of academy dining is maintained at all times.

Hours:                        7:00am – 3:00pm: 36 hours per week, permanent

Job Description: Chef de Partie

 

Reports to: Catering Manager/Sous Chef

Start date: ASAP

Salary: Scale 3 point 11-14
Hours: 36 hours per week, Term Time +3weeks permanent

The Role

  • To consistently prepare cooked breakfast and support sous chef in cooking of mid-morning break and lunches in accordance with the school food standards, under the direction of the Chef Manager
  • To report to Sous Chef
  • To supervise staff whose kitchen duties are allocated by the Chef Manager
  • To ensure high levels of cleanliness is maintained in the kitchen dining area and that a high standard of catering service is always provided.
Key Responsibilities

Food

  • To assists in the planning and preparation of menus.
  • Requisitions supplies for area of responsibility.
  • Ensures that food is prepared in accordance with School’s Hygiene Procedures, e.g. temperatures are recorded, samples are taken, foodstuffs are stored safely and hygienically and a food production plan is completed.
  • Ensures that dishes are produced and costed to required standards of quality and presentation for service.
  • Assists in the planning, preparation and cooking of food for special functions and special days.


Operational

  • To ensure work areas are maintained in a clean and hygienic state at all times
  • To adhere to the academy’s hygiene, health and safety policies
  • To demonstrate good standards of customer service
  • To assist with stock control/stock taking
  • As and when required by the Chef Manager, to carry out additional tasks concerned with the operation of the kitchen
  • To instruct Catering Assistants in food production methods
  • To receive and check supplies and store safely away

 

Other

  • To undertake any other  reasonable requests made by the Chef Manager/Sous chef
  • To attend external meetings or training courses as required.

Person Specification: Chef de Partie

 

Qualification Criteria

  • Right to work in the UK
  • GCSE level Math’s and English or equivalent level qualification
  • Relevant Health & Safety and Basic Food Hygiene qualifications (preferred but not essential)
  • First aid qualification (preferred, but essential)

 

 

Specific Skills

  • Ability to prioritise workload and hit deadlines
  • Strong interpersonal and communications skills, able to communicate with pupils and colleagues in a friendly and professional manner
  • Willing to work flexible hours as the business requires

 

Experience

  • Experience of high volume catering essential, ideally within a school or education setting
  • Experience of working with children (preferred, but essential)
  • Experience of cultural diversity, with particular reference to food preparation and dietary preferences (preferred but essential)
  • Experience of providing excellent customer service
